A Few of Vjera's Recipes

Hot Salad

This is high on the labor scale but high on the enjoyment scale too.

2 kilo yellow onion coarsely chopped
2 kilo bell peppers coarsely chopped
3 kilos tomatoes peeled and coarsely chopped; start tomatoes cooking

Brown onion in oil, add peppers and cook down, add partly cooked tomatoes and cook down; add Vegeta or salt

Serve with boiled potatoes and white cheese

Polpet

Haven't done this myself, yet.

1/2 kilo ground beef (young but not veal)
1 potato peeled and grated (raw)
2 tsp Vegeta
8 cloves garlic chopped fine
2 eggs if meat is dry, otherwise 1 egg
parsley chopped fine

Mix all ingredients; let sit for 10 minutes; form into hamburger patties; coat with all-purpose flour; fry in oil with medium heat.

Serve with boiled potatoes or mashed potatoes.

Beans

Modest labor, very enjoyable, but you do have to plan ahead to soak the beans. Personally, I prefer to boil smoked ham hocks the day before, then chill the broth and skim the fat. Then soak the beans overnight and proceed.

Soak 1 lb. large flat white beans (limas? pintos?) overnight in lukewarm water
Change water; boil in minimum water
Boil smoked ham separately; when meat is done, remove meat; pour off some water if very salty;
add remaining water to beans
Add 2 onions chopped to beans
When beans start to crack, in another pan, heat oil and all-purpose flour; when brown, add tomato paste, black pepper, cook a few minutes and add to beans
Before beans are completely done, add red pepper (paprika), mint, and finely chopped garlic; let cook until done

Kachamak (polenta)

Low on labor scale, modest on enjoyment scale as far as I am concerned although Blazo thinks this is first rate. You can't get kajmak in the USA of course.

Boil water with salt and a little kajmak or butter
Pour in precoooked corn flour and stir for 2 minutes

Serve with white cheese

Restovani Krompir (Montenegrin Hashbrown Potatoes)

Modest labor, modest enjoyment. I think this is intended as a way of using up already-boiled potatoes.

Peel and boil potatoes
Slice very fine
Put oil in pan, brown chopped onion, add potatoes and black pepper

Paprikash (Montenegrin Goulash)

Modest labor, high enjoyment.

2 medium onions, chopped
6 small carrots, chopped
2 heads of garlic, chopped
parsley
6 medium potatoes cut in medium pieces
1/2 kilo stewing beef cut in small squares
Paprika (sweet red pepper)
Vegeta
Black pepper

Brown the onion. Add in carrots. Add in beef. As meat browns, add boiling water. Add parsley, garlic, paprika, pepper and Vegeta. Cook until potatoes are tender. Be generous with the spices --- this is supposed to be spicy.

Serve with white cheese and bread.

Boiled Beef

This is the minimum labor, modest enjoyment recipe.

1 kilo beef ribs
carrots, peeled and cut up
onion, chopped
Vegeta
1 cup rice

Boil beef, onion and Vegeta until meat separates from bone. Add carrots and rice and cook until done.

Serve with mustard.
